Faaast Penguin only recently showed up on Switch, and I put a couple of hours into it over a weekend mostly because free party racers on this console have been stale for years. Local and online multiplayer both work, rounds are quick, and nothing about the monetization felt aggressive during my time with it. It hasn't proven it can hold a community yet, which is the honest reason it sits here instead of higher up. If you want something newer than the usual free racers, it's worth a look. Give it time.
